Flavorful Breakfast Quesadilla

Ingredients
2 tablespoons red bell peppers
2 eggs
kosher salt
ground black pepper
2 tablespoons butter
¼ cup black beans
2 6" tortillas (flour or corn)
⅓ cup shredded cheddar cheese
optional toppings: sour cream, guacamole, salsa
**feel free to add your choice of meat**
Instructions
Step 1: To prepare, start by dicing the bell peppers. Whisk together the eggs, kosher salt, and ground black pepper using a fork. Step 2: Heat a medium sized nonstick skillet over medium heat. Add 1 tablespoon of butter. Once the butter is melted, add the whisked eggs to the skillet and cook for 2 minutes or until the eggs begin to firm.
Step 3: Use a spatula to scramble the eggs. Add black beans, bell peppers, and kosher salt to the eggs. Continue cooking and scrambling the eggs for another 2 minutes or until fully cooked. Remove the eggs from the skillet and set aside.
Step 4: Add the remaining 1 tablespoon of butter to the skillet. Once melted, place a tortilla onto the skillet with the shredded cheese, scrambled eggs, and the second tortilla placed on top. Cook for 1-2 minutes. Use a spatula to flip the quesadilla and cook the other side for another 1-2 minutes or until crispy.
Step 5: Cut into 4 slices and serve with one of the optional toppings. Enjoy!
