Sweet Cinnamon Swirl Pancake

Ingredients

1 cup all purpose flour

1 ½ teaspoons baking powder

2 tablespoons sugar

¼ teaspoon salt

1 cup milk

1 large egg

1. teaspoon vanilla extract

4 tablespoons butter (melted)

1 teaspoon cinnamon

2 teaspoons brown sugar

optional toppings: strawberries, bananas, peanut butter, coconut, chocolate chips, walnuts, etc.



Instructions

Step 1: Begin by preheating the oven to 425ºF. Mix together flour, baking powder, sugar, and salt in a large bowl. In a separate bowl, whisk together milk, an egg, vanilla, and 2 tablespoons of the melted butter. Add the wet ingredients to the dry ingredients and mix until there is a smooth texture. Let the batter sit for 5 minutes.

Step 2: In another bowl mix together 1 tablespoon of melted butter with cinnamon and brown sugar. Set the bowl aside.

Step 3: Preheat a 10" oven safe skillet over the stove on medium heat. Add 1 tablespoon of butter and spread it around as it melts. Pour the batter into the skillet and drizzle the cinnamon mixture over the batter. Use a spoon to swirl the cinnamon into the batter by dragging it across the surface.

Step 4: Place the skillet in the oven and bake for 15-20 minutes or until puffy and golden brown. Check if it is fully cooked by inserting a toothpick to make sure it comes out clean.

Step 5: Let the pancake cool slightly before slicing it into smaller pieces. Enjoy!
