Crunchy Ham Omelette Wrap

This breakfast recipe takes omelettes to a whole new level! The wrap proves that scrambled eggs or granola bars aren't the only options when it comes to waking up late on a weekday. With just 5 easy steps and 1 pan, this crispy omelette wrap will fit perfectly in hand to get the day started!

Ingredients

2 large eggs

kosher salt

freshly ground black pepper

1 tablespoon unsalted butter

8 inch whole wheat tortillas

⅓ cup spinach

2 slices American cheese

2 slices deli black forest ham

optional: toothpicks






Instructions

Step 1: Begin by heating a medium sized skillet over medium heat. While waiting, whisk together the eggs, kosher salt, and ground black pepper in a small bowl.

Step 2: Once hot, melt the butter in the skillet. Pour in the whisked eggs and coat the bottom of the skillet with an even layer of eggs. Quickly dip both sides of a whole wheat tortilla in the eggs and then place it into the skillet. Cook the eggs for 3 minutes or until the whites are no longer runny and translucent.

Step 3: Flip the tortilla and eggs. Add spinach, cheese, and ham to half of the tortilla. Continue to cook for another 2 minutes or until the bottom is golden brown. Turn off the heat.

Step 4: Transfer the food onto a plate using a spatula. Begin rolling the tortilla into a tight wrap, starting with the side that has all the fillings. Keep the wrap seam side down or use a toothpick to keep it closed.

Step 5: Cut the wrap in half. Enjoy!
