Fresh Kale Salad with Chicken

Don't let the word "salad" fool you - this recipe is extremely filling! The fiber rich dish is perfect for meal-prepping or leftovers because of how well the ingredients stay fresh in the fridge. Quickly toss together this tasty salad by following the 5 easy steps below!

Ingredients

1 chicken breast (sliced)

1 cup celery (chopped)

⅓ cup almonds (sliced)

6 cups kale (chopped)

⅓ cup golden raisins

½ cup mayonnaise

3 tablespoons apple cider vinegar

1 ½ tablespoons honey

½ tablespoon dijon mustard

¼ teaspoon salt

¼ teaspoon black pepper


Instructions

Step 1: Begin by cooking a chicken breast

Slice the cooked chicken into small, bite sized pieces.

Step 2: Chop the celery into smaller cubes. Remove the kale from the stems and tear into 1-2 inch sized pieces. (Side Note: remember to rinse and drain the kale in a colander!)

Step 3: Whisk together mayonnaise, apple cider vinegar, honey, dijon mustard, salt, and ground black pepper in a medium sized bowl.

Step 4: To build the salad place the kale at the bottom of the bowl and top it with the sliced chicken, chopped celery, almonds, and golden raisins.

Step 5: Drizzle the dressing evenly across the top and toss the salad. Enjoy!
