Cheesy Spinach and Feta Melt

This delicious recipe will melt in your mouth! Instead of making a typical grilled cheese, spice things up by adding feta cheese and spinach for a flavorful experience. Follow the 5 steps below and in just 15 minutes you'll have a new favorite sandwich!

Ingredients

½ tablespoon olive oil

1 clove of garlic (minced)

¼ lb. spinach (chopped)

kosher salt

ground black pepper

4 slices of your choice of bread

2 tablespoons butter

1 cup mozzarella (shredded)

1 oz. feta

crushed red pepper







Instructions

Step 1: Heat a medium sized skillet over medium heat. Once hot, add olive oil and minced garlic to the skillet and sauté for one minute. Add chopped spinach, kosher salt, and black pepper to the skillet and continue to sauté until all the moisture evaporates.

Step 2: Spread butter on one side of each slice of bread. Flip the slices over so the buttered side is now facedown. Add half of the shredded mozzarella and all of the crumbled feta evenly between two slices of bread.

Step 3: Divide the cooked spinach between the same two slices of bread and spread the remaining mozzarella on top. Top it off by adding crushed red pepper flakes. Place the other two slices of bread on top of the sandwiches with the buttered side face up.

Step 4: Heat a large sized skillet over low heat. Once hot, place both sandwiches on the skillet and cook until crispy and golden brown on both sides. Step 5: Cut the sandwiches in half. Enjoy!
