Zesty Chipotle Chicken and Rice Bowl

This smokey one-pot recipe is not only tasty, but it will save you from having to wash too many dirty dishes! Although this recipe takes a little longer to cook, the preparation is super fast and easy to follow. Follow the 5 simple steps below and you'll have a delicious meal in no time!

Ingredients

1 ½ teaspoons chipotle powder

1 teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

kosher salt

1 lime

1 lb. (2) boneless, skinless chicken breasts

1 tablespoon cooking oil

1 yellow onion (diced)

tomatoes (diced)

1 cup chicken broth

1 cup long grain white rice

optional toppings: green onions, cotija cheese, sour cream, avocado




Instructions

Step 1: Begin by heating a large sized skillet over medium heat. Mix together chipotle powder, cumin, garlic powder, onion powder, and kosher salt into a small bowl. Cut a lime in half and squeeze one slice into a separate bowl. Coat the chicken slices with half of the spice mix. Step 2: Add cooking oil to the skillet. Once hot, add both slices of chicken and cook until slightly browned (chicken will finish cooking later). While the chicken cooks, dice the yellow onion and tomatoes. Remove the slightly browned chicken from the skillet and place to the side.

Step 3: Add the diced yellow onions to the same skillet and sauté until soft. Add the remaining spice mix and sauté for one more minute. Lastly, add the diced tomatoes, rice, chicken broth, and lime juice to the skillet. Stir the ingredients together and add the slightly browned chicken back to the skillet.

Step 4: Place a lid over the skillet and turn the heat up to medium high until boiling. Once boiling, turn the heat down to low and let it simmer for 15 minutes. After 15 minutes, turn off the heat and let the skillet sit with the lid on for 5 more minutes.

Step 5: Remove the lid and slice the chicken on a cutting board. Mix the rice and place the sliced chicken back on top. Add remaining lime wedges and serve with toppings of your choice. Enjoy!
